postheadericon Putong Bigas (Putong Puti)

This recipe is steamed puto made from ground ordinary rice instead of the usual flour. There are many varieties of rice used in cooking. Don’t use the glutinous rice which is the variety usually used in cooking kakanin or other native delicacies like suman. Use only ordinary rice.

Ingredients:

2 cups rice
1 & 1/2 cups water
1 & 1/2 cups white sugar
1/2 tsp salt
3 tbsp baking powder

How to make Putong Bigas

  • Soak rice in water and grind to consistency of thick batter. Add sugar, salt and baking powder.
  • Mix thoroughly. Pour into molds 2/3 full.
  • Arrange in steamer and steam 30 minutes or if toothpick inserted in center of puto comes out dry.

    Can i change the rice with water mixture then blended for rice flour and water? Will it be the same?

    Yes it can be used but I’m not sure about the measurement on how many cups of rice flour. Maybe you can weight the 2 cups dry malagkit rice and use that weight on the rice flour. I think 1 cup of rice is equivalent to 200 grams.
