Ampalaya salad or bitter gourd salad is a very simple but a very healthy salad recipe specially for diabetics. Bitter gourd lowers blood sugar and have been a medicinal plant and food supplement for diabetics. When eaten raw, bitter gourd is not bitter so don’t be afraid that the salad will taste awful. The technique there is to slice it as thinly as possible.
2 medium size ampalaya (bitter melon or bitter gourd)
1 medium size red onion, sliced very thin
2 ripe tomatoes, sliced
How to make ampalaya salad:
- Divide ampalaya and remove the seeds. Slice thin crosswise.
- Add sliced tomatoes and sliced onions. Add salt to taste.
